  • First i am making the baltistan momo that are most likely eat in Baltistan

For the Dough:

  • 2 cups all-purpose flour (or half wheat flour for a healthier version)

  • ½ tsp salt

  • Water (as needed for kneading)

    • 250g minced mutton or chicken (traditionally mutton is used)

    • 1 small onion, finely chopped

    • 2-3 garlic cloves, minced

    • 1-inch ginger, grated

    • 1 green chili, finely chopped (optional)

    • ½ tsp cumin powder

    • ½ tsp coriander powder

    • ½ tsp black pepper

    • Salt to taste

    • 1 tbsp oil (or yak butter for authentic flavor)

    • Fresh coriander leaves, chopped (optional)

    • For Serving:

      • Chutney (Tomato or Mint-Coriander)

      • Garlic-Yogurt Sauce

        • Mix flour and salt in a bowl.

        • Gradually add water and knead into a smooth, firm dough.

        • Cover with a damp cloth and let it rest for 20-30 minutes.

        2. Make the Filling:

        • Heat oil in a pan, sauté onions until soft.

        • Add garlic, ginger, and green chili, cook for a minute.

        • Add minced meat and cook until it changes color.

        • Add cumin, coriander, black pepper, and salt. Mix well.

        • Cook until meat is fully done (no need for extra water).

        • Add fresh coriander (if using) and let it cool.

        3. Shape the Momos:

        • Roll the dough into a thin sheet and cut small circles (3-4 inches diameter).

        • Place a spoonful of filling in the center.

        • Fold and pleat the edges to seal (half-moon or round shape).

        4. Steam the Momos:

        • Grease a steamer basket or line it with cabbage leaves.

        • Arrange momos, leaving space between them.

        • Steam for 12-15 minutes over boiling water.

        5. Serve Hot:

        • Enjoy with spicy tomato chutney or mint-coriander sauce.

        • Baltistani momo is also served with garlic yogurt dip for a creamy contrast.

        •                      tomato ketchup make it more batter
